"Parting is such sweet sorrow."

They never said that.

What people say
"Parting is such sweet sorrow."
What was actually said
"Good night, good night! parting is such sweet sorrow, / That I shall say good night till it be morrow." Juliet — Romeo and Juliet (1597) II.ii

Why it stuck

The full couplet resolves in a playful paradox — keep saying goodnight until it is morning. Isolating the first line turns adolescent wordplay into weary aphorism.

Juliet is enjoying herself. Modern quoting makes her sound heartbroken.
